Banana Muffins

I have tried lots of muffin recipes over the years because I love muffins!! They are an easy snack to eat on the run but most importantly they are delicious!! Of all the recipes I’ve tried there are 2 I make faithfully. One recipe is for blueberry and the other is for banana muffins. Today I am sharing the banana muffin recipe because it is so versatile and yummy!

This recipe originally came from my ‘step’ mother-in-law but I have since passed it on to my sisters and many of my friends!! Not only are these muffins easy, they are full of fiber, so they really ‘keep you regular’ if you know what I mean ;).  I will add the nutritional info at the bottom for anyone who is interested.

Ingredients:

1 c. whole wheat flour

¾ c. ground flax seed

¾ c. wheat bran

1 tbsp. baking powder

1 tsp. Baking soda

1 tsp. Cinnamon

¼ c. mini chocolate chips

1 egg, beaten

¾ c. brown sugar

¾ c. buttermilk (I use regular 1% milk)

4 or 5 ripe bananas, mashed

My Variation: I have used blueberries, raisins, sunflower seeds, dried cranberries and cut up pieces of prunes instead of chocolate chips. Also, I use ¼ c. unsweetened coconut and ½ c. of sugar to replace the ¾ c. sugar.

Directions:

  • Measure dry ingredients (except brown sugar) and mix in a large bowl.
  • Mix mashed bananas, brown sugar and egg in a small bowl.

  • Add both the wet ingredients and milk to the large bowl. Mix until just combined, don’t overmix!

  • Bake in a greased muffin tin at 400˚ for 20-25 minutes.

  • Store in the refrigerator.

Nutritional Info (per muffin): 190 calories, 5.2g protein, 5.8g fat, 31g carbs and 6g fiber.

  1. They sound divine… love the nutritional info… I need the carbs to to do my points!!!! Picky and fussy aren’t I. I can do wheat bran, I thought you said wheat germ… will try soon and compare to my Nana;’s yummy recipe… except your’s are healthier! C
