Our Favorite Pancakes

Growing up we were a ‘Bisquick’ mix pancake family. My mom would make us little tiny pancakes on a large electric grittle, it is a fond breakfast memory I have. Originally when I moved out and started cooking for myself I used ‘Bisquick’ mix as well. That is until I was introduced to homemade pancakes. I have tried out 15 or so different pancake recipes until I found the right one. There is only one recipe we use now. Yes, I said ‘we’, Brad will whip these up some Saturday mornings. It is one of the few recipes he cooks from.  It is from Nigella Lawsons cookbook, ‘How to be a Domestic Goddess’. This is one of my very favorite cookbooks! You will need a scale for the majority of the recipes in this book (most everything is measured in grams). I got my scale from Canadian Tire for under $10.00 and would recommend picking one up, especially if you plan on using any cookbook from the UK.

Nigella’s American Breakfast Pancakes 

225 g. Flour (1 1/2 c. + 1 tbsp.)

1 tbsp.  baking powder

Pinch of salt

1 tsp. Sugar

2 large eggs, beaten

30g. Butter, melted & cooled (approx. 2 tbsp.)

300 ml. Milk

Butter for frying

Directions:

The easiest way to make these is to put all the ingredients to a blender and blitz. If you do mix up the batter by hand in a bowl (which is how I mix them up), make a well in the dry ingredients then beat in eggs, melted butter and milk.

Transfer to a jug (I use a 1/4 c. measuring cup): it’s much easier to pour the batter into the pan than spoon it in. I like to leave the batter for 20 minutes before using it – Resist the tempation to skip this  step, it makes the pancakes fluffy).

When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it’s time to cook the second side, and this needs only about 1 minute, if that.

VARIATION – Add a blueberries, strawberries, banana, shredded carrot or small diced pieces of peeled apple or pear to the batter just before frying. I used blueberries and pears today.
